  • 1 lb Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 package (9 oz) refrigerated cheese tortellini
  • 2 cups fresh spinach leaves
  • Grated Parmesan cheese, for serving

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set aside.
  2. In the same pot, add the diced onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  3. Return the cooked sausage to the pot. Pour in the chicken broth and diced tomatoes (including the juices). Stir in the dried basil, dried oregano, and red pepper flakes, if using. Season with salt and pepper to taste.
  4. Bring the soup to a simmer and let it cook for about 10 minutes to allow the flavors to meld together.
  5. Add the cheese tortellini to the soup and cook according to the package instructions, usually about 7-9 minutes or until the tortellini are tender.
  6. Stir in the fresh spinach leaves and let them wilt in the soup for a minute or two.
  7. Once the tortellini are cooked and the spinach is wilted, taste the soup and adjust the seasoning if needed.
  8. Serve the Italian Sausage Tortellini Soup hot, garnished with grated Parmesan cheese.

Cook’s Note: If you can’t find Italian sausage, you can substitute ground pork or turkey seasoned with Italian seasoning for a similar flavor profile.
